Cultivation of Lactic Acid Bacteria and Evaluation of the Antimicrobial Potential of Partially Purified Bacteriocin-like Inhibitory Substances against Cariogenic and Food Pathogens

One of the major challenges in pharmaceutical industry is search for new antimicrobial compounds that can replace antibiotics. Lactic acid bacteria (LAB) produce bacteriocin-like inhibitory substances (BLIS) have a bacteriostatic or bactericidal effect against different bacterial genera, including those responsible dental caries. Among pathological processes microbial etiology, caries stands out, whose main pathogenic agent species Streptococcus mutans, present about 80–90% oral cavity. In this context, study aimed to and semi-purify BLIS from Lactobacillus plantarum ST16 Pa, Bifidobacteriumlactis BL 04, Lactococcus lactis CECT-4434 27 as well assess their potential important causing pathogens like S. mutans UA159, Listeria innocua 2711, Carnobacterium maltaromaticum CECT 4020, Staphylococcus aureus 239, Escherichia coli ATCC 25922. While L. Pa were able inhibit growth only which was produced by B. 04 did so all bioindicator strains; therefore, suggests its application could be control cariogenic microorganisms.
